WULF'S HACKLEBACK STURGEON CAVIAR

Hackleback (a.k.a. shovelnose) is the last American wild caviar. Indigenous to Mississippi and Missouri, this small grain caviar is nearly pitch black in color. What it lacks in size it makes up for with its amazing firm texture and rich, nutty flavor.  

This caviar lends itself to dishes with burrata, smoked salmon, crab, lamb, mushrooms. Let your culinary experimentation flow.

WULF'S AMERICAN BOWFIN Roe

This wild-caught ancient Bowfin (a.k.a. Choupique) yields small black roe with an occasional red tint. It is highly regarded for its intense earthy and distinctive flavor, with mild tang and hints of spice. 

This roe lends itself to dishes with ingredients like smoked salmon, crème fraiche, and quail eggs.  

WULF'S PADDLEFISH RoE

With color that ranges from light green to dark steel gray, American paddlefish roe is comparable to Caspian Sea Sevruga in flavor, at a lesser cost. Also known as "spoonbill" because of its duckbill-like snout, the fish is caught in the Mississippi river and produces a strong, earthy flavored roe with clean brine and mineral notes.  

This roe lends itself to dishes with crème fraiche, eggs, and potatoes. 

WULF'S smoked trout roe

Farm-raised in the cold waters of France, our smoked trout roe has a delicate flavor and a wonderful snappy finish. The cold smoked rainbow trout roe is seasoned with sea salt and lightly smoked with apple and cherry wood, producing one of our most incredible palette pleasers. 

The natural smokiness of this product goes great on appetizers, canapés, adding flavor to sauces, and topping to fresh oysters or seafood dishes.  

WULF'S salmon roe

Sourced from the deep cold waters of the northern Pacific Ocean surrounding Alaska, the salmon from this region are prized for producing caviar with larger, firmer beads. This high quality lkura (salmon roe) explodes with juicy sweet­ness and the flavor of the sea — a perfect treat for the discriminating sushi enthusiast.

Flying fish roe, popularly known by its Japanese name "Tobiko," is an essential topping for sushi rolls and other Asian dishes. These tiny eggs from the tropical flying fish are highly revered for their extremely crunchy, pop-in-your-mouth texture. The unique texture and very mild taste make tobiko great for adding a little crunch and color to a dish, without transforming the flavor.
